Title: Veggie Pierogy Chili Blast

Yield: 1 Batch

2 16oz. pkg. mrs. t's perogies
1 Prepared per pkg directions.
1/3cOlive oil
3cChopped onion
3/4cChopped cleery
1cChopped carrots
1cChopped zucchini
1cChopped yellow squash
1cChopped mushrooms
1tsMinced garlic
1/4tsRed papper flakes, or to taste
1tsGround cumin
3/4tsOregano
2tsSalt
1/2tsPepper
2cTomato juice
3cChopped tomato
1cn(20oz)undrained kidney beans
1/2tsTobasco sauce (or to taste)
2tbLemon juice
3tbTomato paste
1tbWorcestershire sauce
1/4cDry red or white wine
2tbChopped green chilies or jajapenos

Have all chili ingredients ready. Heat the olive oil in the skillet. Over high heat, add onions, celery, green peppers, carrots, zucchini, squash, mushrooms, garlic, spices, salt & peppers. Cook 2-3 minutes while stirring. Add remining ingredients. Bring to a boil while strirring. Reduce the heat and simmer 20-30 minutes, uncovered. If too thick, the chili can be thinned with additional tomato juice. Prepare the pierogies as per package and top with this spicy chili. Enjoy
